Vinification: | Separate traditional fermentation for each grape variety, with daily pumping the must over the cup for at least 15days up to 30 days |
Aging: | Dolcetto age in stainless steel tank, while the Nebbiolo and the Barbera are aging separately for 12 months in French Oak. Then the wine are blended for 6 months of affination. |
